History of Sun-dried Tomatoes
Sun-drying is one of mankinds oldest preservation techniques, dating back to ancient Egypt. Our innovative ancestors discovered that the intense sun rays provided large natural outdoor ovens for preserving food.

Eventually the method was passed on to the rest of the world, the sun-drying process evolved and the sun-dried tomatoes as a product got more recognized and appreciated especially in the Mediterranean.

All farm and packhouse level procedures are managed by a well-trained team and performed in accordance with GlobalGAP Standards, and GRASP social standards. Cleanliness and safety standards are continually monitored throughout the whole drying and packing procedures.

Process & Specs
As a matter of fact, the sun drying process intensifies and preserves the rich tomato flavor.

After sorting & grading the fresh tomatoes, theyre washed, sliced and exposed to the sun for 10 to 14 days to dehydrate while the humidity levels reach 15-25%.

They shrink and lose moisture & 93-94% of their weight. In fact, it takes up to 13 kg of fresh tomatoes to produce 1kg of sun-dried tomatoes.

This process, made with only handpicked tomatoes, sun and salt, results in tomatoes with an intense red color, sweet flavor, chewy & tangy pulp that provide a one of a kind e taste experience.

The best way to store sun-dried tomatoes is to keep them refrigerated, where they will stay fresh for up to two years.
